Green Bean Soup (綠豆湯) Recipe

We are a family of "heaty" people. Other than drinking Chrysanthemum tea with honeysuckle flowers to reduce heatiness and Ling Yang drink when we have high fever, recently, we make green bean (mung beans) soup.


It is very simple to prepare!


Ingredients (4 servings):
  • 250 grams Green beans 
  • 2 litres Water 
  • Rock sugar (I use one small piece, you can add according to preference of your taste bud)


Instruction:
  1. Rinse the green beans a few times to remove the dirt and remove the spoilt green beans if any. Place the green beans in a bowl of water and leave it for 30 minutes.
  2. Bring the pot of water to boil, add in the green beans, boil at medium high heat for 10 minutes, and lower the heat and simmer for another 40 minutes. 
  3. Add the rock sugar, stir until the rock sugar is dissolved.
