4-Ingredient Eggless Matcha (Green Tea) Ice-cream

The last time we made ice-cream at home was about a year ago - we made matcha (green tea) ice-cream for our ice-cream moon cakes.

This time, I try a new recipe that does not require eggs. The reason? I forgot to buy eggs!


300 ml thickened cream
150 ml milk
0.3 cup sugar
2 tablespoons Matcha (green tea) powder (I bought mine from Phoon Huat)

  1. Warm the milk in a saucepan over low heat, do not boil it. Add Matcha powder and sugar into the warm milk. Stir until matcha powder and sugar are dissolved. Allow the mixture to cool.
  2. Whip the cream until it is thick and stiff.
  3. Fold the mixture from Step 1 into the whipped cream using a spoon or spatula. 
  4. Put the Matcha ice-cream into the freezer. Take it out for every 1 hour to mix well, this minimises the formation of crystals in the ice-cream and improves the texture. Repeat this step for 2 to 3 times.
  5. Freeze it for a few hours or overnight.
